For the Citrus Syrup: Put all the ingredients into a pan, bring to a simmer, mixing until the sugar dissolves. After that, turn off the heat allowing it to reach room temperature entirely. Pour to a sterilised bottle, seal and store in the fridge, it can be stored for around four weeks.
To make Cocktail Base: Pour all the liquids into one big jug, let it rest for an hour, then strain , ideally through muslin, to ensure it's fully clarified.
When ready to serve: Pour 85ml of the batch mix into your stirring glass containing ice, gently stirring lightly for one minute to chill. Pour into a frosted cocktail glass or a similar vessel, decorate with a few cranberries and finish by giving it a brief mist of mandarin oil above the glass.
